Po' mom's cookie - take 2
1 stick butter, softened
1 8 oz. package cream cheese, softened
1/2 c sugar
1/4 c flour
1/2 t vanilla extract
1/4 t baking powder
zest of 1 lemon
juice of almost 1 lemon
The batter tasted too salty. I know Kat adds salt but since I have salted butter, I didn't add any. Maybe even then, it's too salty. Time to buy some unsalted butter.
So this time the cookies are zingier, I think the juice helped. Next time I'll stick to juice of 1/2 a lemon. I think what is missing is sugar! I'm hoping more sugar will not only sweeten the cookies but change the consistency. These cookies are all floppy, not chunky or almost shortbready. Sugar. Up the sugar.
These dud cookies are not as fun to eat as I thought. I should take Tom's advice to make half batches until I get the recipe right.
