Po' mom's cookie
Kathleen makes an awesome lemon cream cheese madeleine (or cookie when there's no fancy tray). It's apparently her sister's secret recipe and Kat can't share it with us. In fact, a few years ago when I asked her for the recipe so I could make it for a friend's shower, she said she could make a few batches and ship it up, but she couldn't give out the recipe. I was determined to peek over her shoulder this Christmas and get the recipe, now that I've cooked a lot more and have an idea of measures. But Tom said she'd probably sneak in and make it while I wasn't looking and that she did.
So I'm on a mission to figure the recipe out and this is what I tried tonight:
1 stick of butter softened
1 8 oz. package of cream cheese softened
1/2 c sugar
1/2 c flour
grated zest of 1 lemon
1/4 tsp. vanilla extract
Bake at 350 for 12-15 minutes
So this batch was a little too doughy. I had the feeling it was when I put in the second 1/4 cup of flour and I could smell more flour than any other ingredient in the mix.
I know Kat also asked my mom if she had baking powder so I wonder if that was for this cookie recipe or the choco chip ones she made later. But I don't know what baking powder does so I didn't feel strongly about putting it in yet. And I did see a bald lemon in the fridge with the juicer attachment so maybe she put in some of the lemon juice too.
