Po' mom's cookie - take 3

Alice was laughing at me today because of the determination I have to figure out this cookie. It is pretty funny that I'm this into defeating a cookie recipe. Good thing lemons were $.20 and cream cheese buy one get one free at Safeway last week. But the cookie will not have the last of me: I am one batch closer to the perfect lemon cream cheese cookie.

1 stick butter, softened
1 8 oz. package cream cheese, softened
1 c sugar
4 Tbsp flour
1/2 t vanilla extract
1/4 t baking powder
zest of 1 lemon
juice of almost 1 lemon

Upping the sugar was definitely a good move. Now the cookies are a little sweeter (and therefore don't taste as doughy) and have a little stick to your teeth quality that Kat's had. I'm still a little perplexed by the flour proportion and whether it's contributing to the fact that these cookies are always floppy (although today's were a little crispy on the edges which is good). I'm also wondering if the butter/cream cheese are a little too soft (or overmixed) when I start. That's a tip I learned from Kat when she said her first batch this Christmas was a little off.

And this time I did a half batch since I'm still experimenting.

Funny thing: Tobey asked for cookies when he saw my duds a couple of days ago. But I don't think he ever ate it after one bite. But this batch, he said unprompted: "Hmm, I like these cookies!" Must be the sugar.
